Any Day can be Taco Tuesday -Starting with this Recipe Today!

Yesss! Bring on the tacos today!! Not only on Taco-Tuesday. 

In my home, fish tacos are a great weekend treat. I lay everything out on the table and have everyone style their tacos the way they like. Another bonus of this recipe, it’s light and doesn’t leave you feeling heavy. And if you ever stuck for recipe ideas, these fish tacos are a real crowd-pleaser. Your guests won’t stop singing your praise!

Ok, ok, enough chatter, here’s the recipe!

Mango Salsa
Ingredients
  • 1 firm mango diced*
  • 1/2 red bell pepper diced
  • 1/2 cup tomato diced (optional)
  • 1 jalapeño pepper seeded and diced
  • 1/2 red onion diced
  • 1 stalk green onion 
  • 1/4 cup cilantro chopped
  • 1 tbsp olive oil
  • 1 juice of a lime
  • add salt and pepper to taste
Method
  • Combine all ingredients in a bowl and mix

*Tip: you can also try 1 cup of frozen mango.

Makes 1 cup.

Taco Sauce/Crema
Ingredients
  • 1/2 cup sour cream
  • 1/3 cup  mayonnaise
  • 2 tablespoon juice from 1 lime
  • 1 teaspoon garlic powder
  • 2 teaspoon sriracha sauce
 Method 
  •  Mix all ingredients together
  •  Place a squeeze bottle or container of choice

This recipe serves 4-6.

Taco
Ingredients
  • 1 package small tortillas
  • 1 box crumbed or battered fish
  • 2 cups coleslaw 
  • 2 cups lettuce (optional)
  • 1 cup Cojita cheese (depending on availability)
  • 1 lime cut into wedges for serving
Method
  • Bake fish according to instructions
  • Prepare mango salsa and refrigerate
  • Prepare taco sauce and refrigerate
  • Give the tortillas a quick toast in a skillet 
  • Layer lettuce, coleslaw, fish and salsa onto taco
  • Top with Cojita cheese and taco sauce

I’m confident this recipe with be a hit in your home too! And for a gathering or get-together, consider adding shrimp and chicken or steak strips to expand the menu. All that’s left for me to say is, you’ve gotta try this!
