Summer is officially here, and that time of year, we hit the fridge for food. I have a salad that will make your taste buds thank you and beg for an encore. It’s a family favourite during the hotter months, with just the right combo of sweetness and spice to please your palate. Without further ado, I present the Curry Chicken Salad accompanied by the ever so versatile Pasta!
1 box pasta
3 diced chicken breasts
3 tablespoons mild curry powder (for chicken)
1 tablespoon oil (for chicken)
1 1/2 cups Hellmann’s mayonnaise
1/4 cup white wine vinegar
1/4 cup honey
1 cup diced celery
1 diced red bell pepper
1/4 cup chopped white onion
1/4 cup chopped scallions
1/2 cup raisins
1 cup slivered almonds
Salt to taste
Dice chicken breasts and season with salt and curry powder
Boil pasta as directed on package, set aside to cool
Cook chicken in a skillet, set aside to cool
Chop, celery, bell pepper, white onion and scallions
Once pasta and chicken have cooled, place all ingredients in a large bowl and mix
Refrigerate for about an hour and serve.
