Curry Chicken Salad with Pasta

Summer is officially here, and that time of year, we hit the fridge for food. I have a salad that will make your taste buds thank you and beg for an encore. It’s a family favourite during the hotter months, with just the right combo of sweetness and spice to please your palate. Without further ado, I present the Curry Chicken Salad accompanied by the ever so versatile Pasta!

Ingredients:
  • 1 box pasta
  • 3 diced chicken breasts
  • 3 tablespoons mild curry powder (for chicken)
  • 1 tablespoon oil (for chicken)
  • 1 1/2 cups Hellmann’s mayonnaise
  • 1/4  cup white wine vinegar
  • 1/4  cup honey
  • 1 cup diced celery
  • 1 diced red bell pepper
  • 1/4 cup chopped white onion
  • 1/4 cup chopped scallions
  • 1/2  cup raisins
  • 1 cup slivered almonds
  • Salt to taste
Instructions
  1. Dice chicken breasts and season with salt and curry powder
  2. Boil pasta as directed on package, set aside to cool
  3. Cook chicken in a skillet, set aside to cool
  4. Chop, celery, bell pepper, white onion and scallions
  5. Once pasta and chicken have cooled, place all ingredients in a large bowl and mix
  6. Refrigerate for about an hour and serve.
